The filling that gives these patties their distinct flavor includes finely chopped onions, green chili peppers, coriander leaves, and hanging curd, which is made by straining yogurt through a muslin cloth. The patties are served after being deep-fried in hot oil till golden brown.

Iran is the home of the classic offal dish known as "kabab-e donbalan."
